Masoor Dal & Mixed Veg Stir

Red lentils cooked soft then tossed with a quick stir of seasonal vegetables for added fiber and protein.
Masoor dal cooks fast and pairs well with crunchy veggies for texture contrast.
This one-pot meal is comfort food at its finest.
Ingredients
- •1 cup masoor dal (red lentils)
- •1 cup mixed vegetables (carrot, beans, bell pepper)
- •1 tsp mustard seeds
- •1/2 tsp turmeric
- •1 tbsp oil
- •Salt and coriander to garnish
Instructions
- 1.Cook masoor dal with turmeric and water until soft; mash lightly.
- 2.In another pan, temper mustard seeds, sauté mixed veg till tender-crisp.
- 3.Fold cooked dal into vegetables, simmer 3–4 minutes, garnish and serve.
