Masoor Dal & Mixed Veg Stir

Red lentils cooked soft then tossed with a quick stir of seasonal vegetables for added fiber and protein.

Masoor dal cooks fast and pairs well with crunchy veggies for texture contrast.

This one-pot meal is comfort food at its finest.

Ingredients

  • 1 cup masoor dal (red lentils)
  • 1 cup mixed vegetables (carrot, beans, bell pepper)
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric
  • 1 tbsp oil
  • Salt and coriander to garnish

Instructions

  1. 1.Cook masoor dal with turmeric and water until soft; mash lightly.
  2. 2.In another pan, temper mustard seeds, sauté mixed veg till tender-crisp.
  3. 3.Fold cooked dal into vegetables, simmer 3–4 minutes, garnish and serve.
