Mixed Lentil Dhokla

A fermented steamed cake made from a mix of lentils and chickpea flour for extra protein and softness.

Using mixed lentils increases protein density while keeping dhokla fluffy.

This traditional breakfast treat is both nutritious and satisfying.

Ingredients

  • 1/2 cup split urad dal (huskered)
  • 1/2 cup chana dal
  • 1/2 cup besan (gram flour)
  • 1 tsp eno fruit salt or baking soda
  • Salt, sugar to taste, tempering of mustard seeds and curry leaves

Instructions

  1. 1.Soak dals, grind to a batter, mix with besan, salt and let ferment 4–6 hours (or quicken with yogurt).
  2. 2.Add eno before steaming and pour batter into greased tray; steam 12–15 minutes.
  3. 3.Tempering: heat oil, mustard seeds, curry leaves and pour over cut dhokla.

FAQ

How to make dhokla spongy?

Use eno/baking soda right before steaming and steam immediately.
