Tofu Palak

A vegan take on palak paneer using tofu for high protein and a silky spinach gravy.

Tofu soaks the palak flavors and increases the protein content while keeping the dish light.

This plant-based curry is hearty yet refreshing.

Ingredients

  • 300g firm tofu, cubed and lightly pan-fried
  • 4 cups spinach leaves, blanched and pureed
  • 1 onion, 1 tomato, ginger-garlic paste
  • 1 tsp cumin, 1/2 tsp garam masala, oil, salt

Instructions

  1. 1.Sauté onions and ginger-garlic paste, add tomato and spices until cooked.
  2. 2.Add spinach puree, simmer, then fold in tofu. Cook 4–5 minutes and finish with garam masala.
  3. 3.Serve with rotis or steamed rice.

FAQ

Will tofu become rubbery?

Use firm tofu and pan-sear briefly to keep texture pleasant.
